Originating in South India, Kashaya is an old homegrown creation with various flavors and spices.
The most common way of making your own heavenly cup of Kashaya squarely in the solace of your own home.
Ingredients for Single Serving of Kashaya:– 1/2 cup water– 1/2 teaspoon coriander seed– 1/2 teaspoon cumin seed– 1/4 teaspoon fennel seed– 1/4 teaspoon black peppercorn– 1 cardamom pod– 1 small piece of cinnamon stick– 1-2 clove– 1/4 tsp dried ginger powder– 1/6 tsp turmeric powder– Jaggery or honey to taste– 1/4 cup milk or a dairy-free alternative
1. Dry roast the coriander seeds, cumin seeds, fennel seeds, black peppercorns, cardamom pod, cinnamon stick, and cloves in a pan over medium heat for about 2-3 minutes until fragrant. Stir continuously to prevent burning.
2. Let the spices cool for a few minutes once roasted. Then, grind them into a fine powder using a mortar and pestle or a spice grinder. Mix the dried ginger powder and turmeric powder in it.
3. Add 1/2 cup of water to a small saucepan and bring it to a boil.
4. Once the water reaches a rolling boil, reduce the heat to low. Next, add the freshly ground spice powder to the simmering water. Stir well to combine the spices evenly.
5. Add jaggery or honey to sweeten the Kashaya. Stir well until the sweetener dissolves.
6. Add milk or a dairy-free substitute to the saucepan for a creamier Kashaya. Simmer for an additional 2 minutes, stirring occasionally.
7. Once ready, pour the Kashaya into a serving cup.
8. Serve hot and savor the soothing flavors of this delightful South Indian herbal drink.
Additional Tips:
Adjust the amount of spice according to your preference. If you prefer a milder flavor, reduce the quantity of black peppercorns or ginger.
Kashaya is traditionally enjoyed without milk, but adding milk adds a creamy texture and richness to the drink. Feel free to omit it if you prefer a dairy-free version or have dietary restrictions.
Additional Tips:
To personalize your Kashaya, you can experiment with different spices and herbs, such as nutmeg or tulsi (holy basil).
I have used dried ginger powder in the mixture. You can even use fresh ginger. Just grate the ginger in the boiling water and let it simmer for 5 minutes to infuse its flavor.
