The popular Gujarati snack, khaman Dhokla is so tasty and spongy to have it for your sudden hungry twinge as it gets ready in 2 minutes and it’s super easy to prepare at home without any fuss in the kitchen or pre-planning.
Take a microwave-safe mug and brush it with oil. Add ½ cup of gram flour/chickpea flour/besan, salt to taste, 1 tsp of ginger chili paste, ⅓ tsp of turmeric powder, ½ tsp of powdered sugar, 1 pinch of asafoetida, 1 tsp of oil, and ¼ cup of curd/yogurt. Mix everything.
Slowly and gradually keep adding water as required to make a smooth batter and keep mixing everything well.
Lastly, add 1 pinch of baking soda and mix gently. Then, microwave it for about 1 minute and 30 seconds. Your dhokla is ready.
Steps for preparing the tempering:
Now take a tempering pan. Add 2 tsp of oil, 1 green chili slits, few curry leaves. Let it pop and then add some water. Mix everything.
Pour the tempering on top of the hot dhokla and your tasty khaman dhokla is ready to serve.

The batter should be of pouring consistency, just like a cake batter.
The secret to get soft and spongy dhokla is to beat the batter well and no lumps should remain.
You can add Eno instead of baking soda.
Do not keep your batter for a long time after adding baking soda.
