Bhatiyara-Style Kadhi Recipe

Ingredients:

For Kadhi:

  • 2-3 tablespoons gram flour (besan)
  • 9 tablespoons yogurt (whisked)
  • 1 tablespoon ginger-garlic & green chili paste 
  • 1 teaspoon turmeric powder
  • Salt to taste
  • 1-2 cup water
  • 2 tablespoons ghee
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon fenugreek seeds
  • 2-4 chopped garlic cloves
  • 1 sprig of curry leaves
  • 1 dried red chilies
  • ½ sliced onion
  • 1 tablespoon fresh cream
  • Fresh coriander leaves for garnish

Instructions:

Preparation Time: 10 minutes

Cooking Time: 30 minutes

Make Kadhi Batter:

  • In a bowl, mix gram flour and whisked yogurt until smooth.
  • Stir in ginger-garlic & green chili paste, salt to taste, and turmeric powder.
  • Add water gradually, stirring continuously to avoid lumps. Set aside.

Cooking Kadhi:

  • Heat ghee in a large pan over medium heat.
  • Add mustard seeds, cumin seeds, fenugreek seeds, chopped garlic, curry leaves, and dried red chili. Sauté until the seeds splutter.
  • Add the sliced onions and sauté for 5 minutes until the color changes to light brown. 

Add Kadhi Batter:

  • Pour the prepared kadhi batter into the pan, stirring constantly to avoid lumps.
  • Bring it to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, stirring occasionally.

Add fresh cream:

  • Add fresh cream to the kadhi for a silky-smooth texture and stir it. 

Simmering:

  • Let the kadhi simmer for an additional 10 minutes until it reaches a thick consistency.

Garnish and Serve:

  • Garnish with fresh coriander leaves.
  • Serve hot with steamed rice, khichdi, or chapati.
