BHATIYARA-STYLE KHICHDI: HOMEMADE INDIAN COMFORT FOOD

Bhatiyara-Style Khichdi Recipe

Ingredients:

  • 1 ½ cups rice
  • 1/2 cup Tuvar dal (pigeon peas)
  • 2 small onions, sliced
  • 3 tablespoons Oil
  • 1 Bay leaf
  • 5-6 Black peppercorns
  • 2 dried Red chilies
  • 3-4 Cloves
  • 1-2 small pieces of Cinnamon stick
  • 1 ½ tablespoons ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 2 glasses Water
  • 1 piece of Coal
  • 3-4 teaspoons Ghee

Instructions:

  1. Rinse and Soak:
  • Thoroughly rinse the rice and tuvar dal under cold water. Drain and set aside.
  1. Boil Dal:
  • Soak the tuvar dal in water for about 30 minutes. Boil it until one whistle.
  1. Prepare Vegetables:
  • Slice the onions for later use.
  1. Heat Oil:
  • Heat the oil over medium heat in a large, heavy-bottomed pot.
  1. Tempering:
  • Add bay leaf, cloves, cinnamon stick, dried red chili, and black peppercorn. Allow them to splutter.
  1. Fried Onions:
  • Add sliced onions and sauté until golden brown. Set them aside.
  1. Sauté Aromatics:
  • In the same pot, add more sliced onions. Sauté for 2-3 minutes until translucent. Then, add ginger-garlic paste and sauté for an additional 2-3 minutes until the raw smell disappears.
  1. Add Water and Dal:
  • Pour in 2 glasses of water. Gradually add the boiled tuvar dal to the pot.
  1. Spice it Up:
  • Add turmeric powder and salt. Mix well.
  1. Add Rice:
  • Introduce the soaked and drained rice into the pot. Mix well with the dal and spices.
  1. Cooking:
  • Bring the mixture to a boil. Cover with a lid and simmer for 15 minutes or until the rice and dal are almost cooked.
  1. Transfer the Pot to the Griddle:
  • Place the pot on the tawa or griddle and cook for 5-10 minutes until the water is thoroughly soaked.
  1. Fried Onions and Masala:
  • Add the previously fried onions and masala on top of the khichdi. Mix well.
  1. Steam with Coal:
  • Place the coal on flames and keep a steel bowl on the khichdi. Put the coal in the bowl and add ghee on top for dum. Close the lid for about 2-3 minutes. Remove the bowl from the khichdi.
  1. Add Ghee:
  • Pour ghee on top of the khichdi.
  1. Serve:
  • Serve the Bhatiyara-style Khichdi hot, accompanied by Kadhi and sabji on the side.

Preparation Time: 15 minutes

Cooking Time: 25 minutes

Total Time: 40 minutes
