CHICKEN MASALA FRY | EASY & FLAVORFUL

Ingredients:

  • 500g chicken, cut into pieces
  • 3-4 tablespoons cooking oil
  • Onions, finely chopped
  • Yogurt / Curd
  • ginger-garlic paste
  • Turmeric powder
  • Red chili powder (adjust to taste)
  • Garam masala
  • Cumin-Coriander powder
  • Salt to taste
  • Fresh coriander leaves for garnish

First Marination:

  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1.5 teaspoons red chili powder (adjust to taste)
  • 1.5 teaspoons garam masala
  • 2 teaspoons cumin-coriander powder
  • Salt to taste

Second Marination:

  • 4-5 tablespoon yogurt
  • 2 medium onions, finely chopped

First Marination Time: Overnight

Second Marination Time: 30-40 minutes (optional but recommended)

Preparation Time: 20 minutes

Cooking Time: 40 minutes

Instructions:

  1. First Marination for the Chicken:
    • In a large bowl, add chicken pieces for marination.
    • Mix ginger-garlic paste, turmeric powder, red chili powder, cumin-coriander powder, garam masala, and salt in a large bowl for the marinade.
    • Coat well all the pieces with the masala. Cover and let it marinate in the refrigerator overnight.
  1. Second Marination for the Chicken:
    • Add yogurt and finely chopped onions to the first marinated chicken. 
    • Coat well all the pieces with the masala. Cover and let it marinate for 30 to 40 minutes or 1 hour.
  1. Cooking the Marinated Chicken:
    • Heat oil in a large, heavy-bottomed pan over medium heat.
    • Add the marinated chicken pieces one by one to the pan. Pour the remaining masalas on the top. 
    • Cook for 10-15 minutes on medium heat, allowing the chicken to brown slightly on one side.
    • Flip it on the other side and let it cook for 10-15 minutes again, allowing the chicken to brown on the other side.
    • Let it simmer for another 10 minutes until the chicken is fully cooked and the masala thickens.
  1. Garnish and Serve:
    • Garnish with fresh coriander leaves.
    • Serve the masala chicken fry hot with steamed rice and dal, naan, or roti.
