Ingredients:
- 500g chicken, cut into pieces
- 3-4 tablespoons cooking oil
- Onions, finely chopped
- Yogurt / Curd
- ginger-garlic paste
- Turmeric powder
- Red chili powder (adjust to taste)
- Garam masala
- Cumin-Coriander powder
- Salt to taste
- Fresh coriander leaves for garnish
First Marination:
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1.5 teaspoons red chili powder (adjust to taste)
- 1.5 teaspoons garam masala
- 2 teaspoons cumin-coriander powder
- Salt to taste
Second Marination:
- 4-5 tablespoon yogurt
- 2 medium onions, finely chopped
First Marination Time: Overnight
Second Marination Time: 30-40 minutes (optional but recommended)
Preparation Time: 20 minutes
Cooking Time: 40 minutes
Instructions:
- First Marination for the Chicken:
- In a large bowl, add chicken pieces for marination.
- Mix ginger-garlic paste, turmeric powder, red chili powder, cumin-coriander powder, garam masala, and salt in a large bowl for the marinade.
- Coat well all the pieces with the masala. Cover and let it marinate in the refrigerator overnight.
- Second Marination for the Chicken:
- Add yogurt and finely chopped onions to the first marinated chicken.
- Coat well all the pieces with the masala. Cover and let it marinate for 30 to 40 minutes or 1 hour.
- Cooking the Marinated Chicken:
- Heat oil in a large, heavy-bottomed pan over medium heat.
- Add the marinated chicken pieces one by one to the pan. Pour the remaining masalas on the top.
- Cook for 10-15 minutes on medium heat, allowing the chicken to brown slightly on one side.
- Flip it on the other side and let it cook for 10-15 minutes again, allowing the chicken to brown on the other side.
- Let it simmer for another 10 minutes until the chicken is fully cooked and the masala thickens.
- Garnish and Serve:
- Garnish with fresh coriander leaves.
- Serve the masala chicken fry hot with steamed rice and dal, naan, or roti.
