EASY MUTTON PAYA RECIPE

Paya Recipe
Ingredients:
- 4 Mutton Paya, bhuna
- ½ cup Mustard Oil
- 4 Onions Slice
- 2 Onions Chopped
- 4 tbsp Ginger-Garlic Paste
- Salt to taste
- 1 tsp Cumin
- 1 small Javitri/ Mace
- 4 Bay Leaf
- 4-6 Cloves
- 3 Cardamom
- ½ tsp Black Peppercorn
- ½ tsp Turmeric Powder
- 2 tsp Red Chili Powder
- 2 tsp Cumin-Coriander Powder
- ½ tsp Garam Masala
- ½ tsp Kasturi Methi
- Coriander Leaves, for garnishing
Method:
Boil the paya:
- In a pressure cooker, heat ¼ cup of mustard oil. Saute 4 sliced onions until light in color.
- Add mutton paya and sauté for around 10 minutes. Stir in 2 tbsp of ginger-garlic paste. Add salt and mix.
- Meanwhile, bring water to a boil separately. Slowly add boiled water to the mutton paya, ensuring it is fully immersed.
- Close the pressure cooker, allow 3 whistles on high flame, and simmer for 40 minutes on low flame.
- Once pressure is released, separate the mutton paya and the soup into different bowls.
Cooking Process for the paya:
- In a pan, heat ¼ cup of mustard oil. Add mace, cumin, black peppercorn, cloves, bay leaf, and cardamom. Let them sputter.
- Add 2 chopped onions and sauté until translucent. Stir in 2 tbsp of ginger-garlic paste.
- Incorporate mutton paya and sauté for 2 minutes. Add turmeric, red chili, cumin-coriander, garam masala, and Kasturi methi. Mix well.
- Bring the soup to a boil and pour in the mutton paya soup gradually, adjusting the gravy consistency to your liking.
- Allow it to cook for 10 minutes, then garnish with freshly chopped coriander.
- Your mutton paya is ready to be served. Enjoy it with chapati, rice, or your preferred choice.
