Step-by-step to Make Kashaya:

  1. Dry roast the coriander seeds, cumin seeds, fennel seeds, black peppercorns, cardamom pod, cinnamon stick, and cloves in a pan over medium heat for about 2-3 minutes until fragrant. Stir continuously to prevent burning.
  2. Let the spices cool for a few minutes once roasted. Then, grind them into a fine powder using a mortar and pestle or a spice grinder. Mix the dried ginger powder and turmeric powder in it.
  3. Add 1/2 cup of water to a small saucepan and bring it to a boil.

  6. Add milk or a dairy-free substitute to the saucepan for a creamier Kashaya. Simmer for an additional 2 minutes, stirring occasionally.

Additional Tips:

  • Adjust the amount of spice according to your preference. If you prefer a milder flavor, reduce the quantity of black peppercorns or ginger.
  • Kashaya is traditionally enjoyed without milk, but adding milk adds a creamy texture and richness to the drink. Feel free to omit it if you prefer a dairy-free version or have dietary restrictions.
  • To personalize your Kashaya, you can experiment with different spices and herbs, such as nutmeg or tulsi (holy basil).
  • I have used dried ginger powder in the mixture. You can even use fresh ginger. Just grate the ginger in the boiling water and let it simmer for 5 minutes to infuse its flavor.
