Sooji Ka Halwa Recipe

Ingredients:

  • 1 cup semolina (suji/rava)
  • 2/3 cup ghee (clarified butter)
  • 2/3 cup sugar
  • 2 cups milk
  • 1/4 teaspoon cardamom powder
  • 1 tablespoon charoli seeds/nuts (Chironji)
  • 10-12 almonds, chopped
  • 10-12 cashews, chopped
  • 1-2 tablespoon raisins 

Instructions:

Preparation:

  • Gather all the ingredients and chop the nuts if they are not already chopped.

Cooking:

  • Heat ghee in a heavy-bottomed pan or kadhai over medium heat.
  • Once the ghee is hot, add semolina to it.
  • Roast the semolina in ghee, stirring continuously to prevent burning. Roast until it turns golden brown and you can smell a nutty aroma, this usually takes about 8-10 minutes.
  • Add sugar to the semolina mixture and continue stirring until the sugar is completely dissolved.
  • Add the milk to the roasted semolina while stirring continuously. Be cautious as it might splutter.
  • Cook the semolina in milk, stirring constantly to avoid lumps, until it absorbs all the milk and reaches a thick, pudding-like consistency. This should take around 3-4 minutes.
  • Now, add cardamom powder and mix well.
  • Add charoli seeds, chopped almonds, cashews, and raisins to the mixture. Keep a few for garnishing if you like.
  • Cook the halwa for another 2-3 minutes until it reaches your desired consistency. If it becomes too dry, you can add a little more ghee.
  • Once done, remove from heat and transfer the suji halwa to a serving dish.
  • Garnish with the remaining nuts and serve hot.
