Dal Dhokli Recipe
Ingredients:
For the Dhokli:
- 3 cups whole wheat flour
- 1/4 teaspoon carom seeds
- 1 teaspoon turmeric powder
- 1 1/2 teaspoon red chili powder
- 1 1/2 teaspoon cumin-coriander powder
- 1 1/2 tablespoon oil
- Salt to taste
- Water for kneading
For the Dal (Lentil Soup):
- 1 cup tuvar dal (split pigeon peas), washed and soaked for 30 minutes
- 4-5 glass water
- 1 green chili, finely chopped
- 1/2 teaspoon turmeric powder
- 1 1/2 teaspoon red chili powder
- 1 1/2 teaspoon cumin-coriander powder
- 6 Kokum, soaked in water
- Peanut, soaked in water
- 2 tablespoon jaggery
- 1 1/2 teaspoon garam masala
- Fresh coriander leaves for garnish
- 1 onion, finely chopped for serving
- Ghee for serving
For Tempering:
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon fenugreek seeds
- 1/2 teaspoon mustard seeds
- 2 dried red chili
- 1/4 teaspoon asafoetida (hing)
- 2 1/2 tablespoon oil
- Curry leaves
Instructions:
Dhokli Preparation:
- In a mixing bowl, combine whole wheat flour, carom seeds, turmeric powder, red chili powder, cumin-coriander powder, oil, and salt.
- Gradually add water and knead the mixture into a soft dough.
- Divide the dough into small lemon-sized portions and roll them into thin discs (like chapatis).
- Cut the discs into small diamond or square-shaped pieces and keep them aside.
Dal Preparation:
- In a pressure cooker, add drain the soaked tuvar dal and salt.
- Add 3 glasses of water, close the lid, and pressure cook for 4-5 whistles or until the dal is cooked well
- Once the pressure is released, open the cooker and bring the dal to a boil. Adjust the consistency by adding more water if needed.
- Add turmeric powder, red chili powder, cumin-coriander powder, chopped green chili, and soaked peanuts. Mix well.
- Add 6 kokum along with the soaked water into the dal.
Assembly:
- Once the dal is boiling, gently drop the prepared dhokli pieces into the dal.
- Let it simmer for 15-20 minutes, stirring occasionally to prevent sticking.
- Add the jaggery to the dal.
- Check the dhokli for doneness; they should be soft and well-cooked.
- Once, the dhokli is done, prepare the tempering. In a small pan, oil, dried red chili, fenugreek seeds, cumin seeds, mustard seeds, asafoetida, and curry leaves.
- Pour the tempering on top of the dal-dhokli. Add garam masala powder and mix well.
- Garnish with fresh coriander leaves.
Serve hot Dal Dhokli with a dollop of ghee, finely chopped onions, coriander leaves, along with lemon slices, and fried green chili. Enjoy!
