Vegetable Sambar Recipe

Ingredients:

  • 1 cup toor dal (split pigeon peas)
  • 1 small eggplant, diced
  • 1/2 cup drumsticks, cut into 2-inch pieces
  • 2 small onion, chopped
  • 1 medium tomatoes, chopped
  • 3 tablespoons sambar powder
  • ¼ teaspoon fenugreek seeds
  • Salt to taste
  • 2 1/2 tablespoons oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • Few curry leaves
  • 2 dried red chilies
  • ½ teaspoon lemon juice

Instructions:

Preparation:

  • Rinse the toor dal under running water until the water runs clear. Soak it in water for 30 minutes.
  • In a pressure cooker, boil the toor dal for 4-5 whistles with salt and set aside.
  • Soak the sambar powder in water and set it aside.

Cooking:

  • Heat oil in a large pot over medium heat. Add fenugreek seeds, dried red chilies, mustard seeds, and cumin seeds. Allow them to splutter.
  • Add asafoetida. Sauté for a few seconds.
  • Add all the vegetables (eggplant, drumsticks, onions, tomatoes) to the pot. Mix them well. Let it cook for 1-2 minutes.
  • Add curry leaves and mix them well. 
  • Add sambar masala. Sauté for 1-2 minutes until the raw smell disappears. Mix vegetables well with the spice mixture. 
  • Add the cooked toor dal to the pot and mix well. Adjust the consistency by adding water if needed.
  • Bring the sambar to a boil, then reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes until the vegetables are tender.
  • Once done turn off the flames, and add lemon juice to the sambar. Give it a quick stir.
  • Your easy sambar recipe is ready. Serve hot with steamed rice, dosa, or idli.

Preparation Time: 15 minutes (excluding dal soaking time)

Cooking Time: 35-40 minutes
