Vegetable Sambar Recipe
Ingredients:
- 1 cup toor dal (split pigeon peas)
- 1 small eggplant, diced
- 1/2 cup drumsticks, cut into 2-inch pieces
- 2 small onion, chopped
- 1 medium tomatoes, chopped
- 3 tablespoons sambar powder
- ¼ teaspoon fenugreek seeds
- Salt to taste
- 2 1/2 tablespoons oil
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- Few curry leaves
- 2 dried red chilies
- ½ teaspoon lemon juice
Instructions:
Preparation:
- Rinse the toor dal under running water until the water runs clear. Soak it in water for 30 minutes.
- In a pressure cooker, boil the toor dal for 4-5 whistles with salt and set aside.
- Soak the sambar powder in water and set it aside.
Cooking:
- Heat oil in a large pot over medium heat. Add fenugreek seeds, dried red chilies, mustard seeds, and cumin seeds. Allow them to splutter.
- Add asafoetida. Sauté for a few seconds.
- Add all the vegetables (eggplant, drumsticks, onions, tomatoes) to the pot. Mix them well. Let it cook for 1-2 minutes.
- Add curry leaves and mix them well.
- Add sambar masala. Sauté for 1-2 minutes until the raw smell disappears. Mix vegetables well with the spice mixture.
- Add the cooked toor dal to the pot and mix well. Adjust the consistency by adding water if needed.
- Bring the sambar to a boil, then reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes until the vegetables are tender.
- Once done turn off the flames, and add lemon juice to the sambar. Give it a quick stir.
- Your easy sambar recipe is ready. Serve hot with steamed rice, dosa, or idli.
